Very well done sir! I also let it come to room temp before cooking. It’s kind of 50/50 wether it’s necessary or not, but I feel it helps it cook more evenly.

Also try pre-salting 12-24 hours in advance and pay dry before cooking if you’ve never tried it. Really makes a difference.
